Kate's Secret Bannock Recipe
1 1/2 cups of white flour
1-cup whole-wheat flour or multi-grain flour
3 tablespoons of sugar
1 teaspoons of salt
2 tablespoons of baking powder
2 tablespoons of margarine
1 cup of cooked mashed potatoes
1 cup of blueberries or raisins
1 cup of milk
In a large bowl, combine flour, sugar, baking powder and salt. Cut in the margarine with a pastry cutter or fork till it resembles tiny pieces. Cut and stir in potatoes. Add blueberries or raisins and mix until evenly distributed. Pour in the milk and stir to form a ball. Turn onto a floured surface, incorporate more flour if needed. Knead 10 times. Place on an ungreased cookie sheet. Pat or use rolling pin to flatten out to ? an inch thick. Bake at 400 degrees for 20 minutes or until well browned.
Yield 1 large round bannock.
