沙爹雞塊、雙菇扒菜心、水果餡餅(圖文)

沙爹雞塊和雙菇扒菜心沒有什麼特別。在這隻講講水果餡餅的做法。

水果餡餅是用罐裝雜果、填料 (pastry cream)、還有餡餅殼子 (tart shell) ,再
加上Apricot 塗料做成的。填料,塗料都可預先做。

做法:

1。把麵團分成兩份。分別趕成1/6英寸厚,鋪在4英寸寬的、塗了油的餡餅模上。把
邊上多餘的面模去掉,用刀叉均勻的在面模上刺孔。

2。把填料倒進模中大概2/3的地方,然後放進水果塊。放進預熱鬧400度的烤箱中10分
鍾,然後把溫度調低成350烤15分鐘。

3。烤好後馬上拿出烤箱,把熱的塗料塗在水果餡餅的表面即成。

下面是填料、料塗與餡餅殼的做法:

A。填料

用料:牛奶3/4杯,糖1/4杯,雞蛋一個,生粉兩湯匙。

做法:

1. Heat the milk and half of the sugar in a source pan until boiling(remember
to stir).

2. In a bowl, mix together the remaining sugar and cornstarch before adding
the egg. Use a wire whip to beat smooth.

3. While stirring egg/starch mixture slowly add about 1/4 of the boiling
milk in the bowl. Stir until mix well.

4. Return the warmed egg/starch mixture back into the boiling milk. With
low heat, stir constantly until very thick. Never let the mixture broiling
again. Remove from the heat if necessary but keep on stirring.

5. Drain the mixture into a suitable container and cover the surface of
the pastry cream with plastic wrap. Press the plastic wrap tightly onto
the surface of the cooked pastry cream.

6. When it cools down, store it in the refrigerator for later use.

B。 塗料(Apricot Glaze)

Combine 1 1/2 cup Apricot Beverage, 3 packets(3/4oz) un-flavored gelatin,
1/4 cup granulated sugar, 1/4 cup Apricot preserves in a sauce pan, stir
well. Bring the mixture to a boil. Then remove from the heat and when
it cool, store in a container in refrigerator. Heat small amounts as needed
until clear and smooth. Brush on with small pastry brush.

C。Tart shell

You may use puff pastry or sugar crust pastry. I used sugar crust pastry
this time.

Use a electric mixer, put half cup flour, five tablespoon sugar and a pinches
salt in, turn on the mixer (with the blade accessory) and spread 2/5 cup
butter(cut into small cubes) while mixing for 15 seconds ; still mixing,
add a egg and wait a few seconds until the paste forms a ball, then stop
mixing. If it is too dry to form a ball, add a little bit water; if it is
too sticky, add some more flour. Leave for at least one hour or put in the
refrigerator for later use.
