好吃 :Cranberry Scones

我用的菜單

Ingredients
2 cups cake flour
2-3 tablespoons sugar
1 tablespoon baking powder
1 tablespoon grated orange zest
80g salted butter, chilled and diced
2 medium eggs, lightly beaten

80g fresh full cream milk
1 cup dried cranberries
1 egg beaten with 2 tablespoons water or milk, for egg wash

  1. Preheat the oven to 190C or 380F
  2. In a large bowl, stir together flour, sugar, baking powder. Cut in butter until mixture resembles coarse crumbs.
  3. Add cranberry to the flour mixture
  4. In another bowl, beat together milk and egg; slowly pour into dry ingredients, mixing with rubber scraper until dough forms.
  5. If the dough is too soft, put it in refrigerator to chill for 30min
  6. Dump the dough onto a well-floured surface, flour your hands and a rolling pin and roll the dough 3/4-inch thick. You should see small bits of butter in the dough. Fold the dough and shape it into a ball, then roll the dough ¾ inch, cut circles of dough into 8 pieces. Place the scones on a baking pan lined with baking sheet.
  7. Brush the tops of the scones with egg wash
  8. Bake for 18 – 20 min


用類似方法做了Raisin Walnut Scones
半杯raisin &半杯walnut來替代cranberry, 這次試着加了1/2 cup whole wheat
